Five Spice Chicken Wings

Five Spice Chicken Wings:

Ingredients:
    675g chicken wings
    1 heaped tea spoon of lazy garlic
    A 'thumb' of shedded ginger***
    4 spring onions, finely chopped
    50ml dark soy sauce
    50ml light soy sauce
    50ml rice wine (or dry sherry)
    2 table spoons sugar
    2 tea spoons five spice powder
    500ml peanut oil for deep frying

Method:
    Take your wok, put the wings and all ingredients into it, except the five spice and peanut oil
    Bring the whole lot to simmering point, cover, and simmer for 20 minutes (turning the wings occasionally)
    Remove wings, drain throughly, and place on kitchen towel to cool.

    When the wings are cool (an hour is plenty), heat the wok again but with the peanut oil this time
    Once the oil starts smoking turn the heat down a little and deep fry the wings for about five minutes (they should be golden brown)
    Place them on kitchen towel again to abosrb the excess oil, then dust with the five spice powder and you're done!
